THE NATURAL SOURCES OF LECITHIN COMES FROM EGG YOLKS, SOYBEANS AND VEGETABLES Lecithin is a very large, compact molecule of organic matter which contains phosphoric acid and choline, and regulates the deposition of fats in the liver, and breaks down fats in the stomach. It is essential for tissue organisms of the nervous and glandular system, and is a generator of physical, mental and glandular energy. It is a raw material for liver synthesis. The fluid part of the blood is composed of blood albumin, which carries inorganic salts, two types of globulins, and the lipoproteins which are composed of lecithin. Blood cells are protected from being destroyed by enzymes in the blood and by an outside covering which is mostly Lecithin and which causes more cells to remain in the blood. Lecithin emulsifies fats, breaking them down to tiny particles. NUTRITIONAL FUNCTIONS Lecithin is important for the myelin sheath around nerves, and helps digest, absorb and carry blood fats, and Vitamins A, D and K. It lowers cholesterol, may prevent fat in the liver and is an important constituent of bile to break down fat in the stomach. It is abundant in the brain, heart, muscles, kidney, bone marrow, spinal cord, liver, endocrine glands and gonads, and forms part of all bones, brain and nerve tissue. Lecithin increases resistance to disease by its role in the thymus gland. It is a precursor for several prostaglandins, which are vital to the body's immune function. Lecithin is also an important part of the membrane phosphatides, where it is involved in electric phenomena, membrane fluidity, and the other functions which the essential fatty acids are responsible. Phosphatidyl Choline, sometimes known as triple strength lecithin, contains 3 times the amount of choline than does ordinary lecithin. This emulsifies fats. If Phosphatides (and proteins) did not surround lipids, they would form greasy bubbles in the blood and rise in much the same way cream rises to the top. The Phosphatides, which the unsaturated fatty acids choline and lecithin are part of, are so important to health that an organism cannot survive without them. Unsaturated fatty acids such as Soybean Oil stay in solution state in the body due to its molecular structure with double bonds that tends to spread them out rather than club together like saturated fatty acids can. Unsaturated fatty acids are essential to the body for the brain cells, especially Phosphatidyl Choline, for sense organs, nerve endings called synapses, the adrenal and sex glands, and for protein breakdown.
